Libyan Sambusa

 

Makes 25

 

Ingredients

 

 

1 chicken

1 onion chopped small

2 carrots grated

1 packet of spring roll pastry (25 sheets). It's more oily than filo pastry and much easier to work with

1l sunflower oil

Black pepper (quite alot).

salt to taste

 

Method

 

 

Skin and joint the chicken. Boil it until it is cooked.

Remove the bones and chop the meat into very small pieces. (You could also use leftover cooked chicken for this recipe).

Heat the oil until it is very hot.

Fry the onion with the black pepper until it is soft.

Add the chicken and fry for 5 minutes.

Add the carrot and salt and fry for another 2 minutes.

Roll the filling up in the pastry, we had pictures of how to do this in out last cookbook which I'll try and post on here in the near future. Be careful not to put too much filling into each roll, about a teaspoon is plenty.

Shallow fry in hot oil until golden, turning once.
