Mrs Khan's Onion Bhajis
Makes about 30 bhajis
Ingredients
10 big or 15 medium onions, peeled and thinly sliced
1 potato cut into small cubes
1 level tablespoon chilli powder or to taste
1 1/2 tablespoons turmeric powder
1 tablespoon garam masala
1 tablespoon cumin powder
salt to taste
about 200g gram flour
oil to deep fry
Method
Put the onions and potato into a large bowl and add all the spices.
Leave for a while to lett he flavours infuse.
Add 2 tabelspoons of salt and leave for 10 minutes or until the onion juices start to come out.
Stir the onions with your hand. Add 150-200g gram flour gradually while stirring and kneading the mixture with your hand until the onions are coated with gram flour
Wet your hands and make palm sized balls of the mixture, then squash them flat (about 1cm thick)
Heat the oil in a large pan or a deep fat fryer and fry the bhajis on amedium heat for about 12 minutes, then increase the heat for another 3 minutes to brown them
Put on absorbent paper to cool
