Beef Masaman

 

Serves 4-6

 

Ingredients

 

 

1k beef cut into cubes

2 tins coconut milk

1 dessertspoon masaman curry paste

3 medium potatoes boiled and then cut in half

1 large carrot boiled and then cut into quarters

2 medium onions

A little bit of sour tamarind paste

2 teaspoons sugar or more to taste

100g peanuts without skins

3 teaspoons fish sauce

 

Method

 

 

Heat the pan - don't add oil!

Add the beef and the fish sauce and fry and stir until the beef is browned.

Add the masaman paste and fry for 2 minutes.

Add 1 tin of cocnut milk and stir gently, then simmer for a while.

Add the other tin of coconut milk, the carrot, potato, onion, tamarind and peanuts.

Cover and simmer on a low heat for up to 2 hours.

Add the sugar in the middle of this time.

Add more fish sauce if you like.
